That’s the name of the recipe I made in my slow cooker today (aka crock pot), and also my blog is a bit about several things…so- soup! 🙂
On Dec 7th from 11 am to 3pm we’re having an official launch party at the Pharmacy/Integrated Medical Clinic (located at 4655 Central Blvd. behind Metrotown Mall) I’m currently working at, of an awesome locally created line of Organic cosmetics. There is a $10 deposit required to hold your spot (this goes towards any of the Sappho make up you purchase that day). We can take a credit card number over the phone. I’m there during the day Mon-Fri, but book your appt fast, they are filling up.
Yesterday I attended a fantastic workshop on creating your own workshop, and yes we all laughed at “Hey I’m attending a workshop on creating workshops.” 🙂 The presenter was also one of my teachers at school and she offers some really great courses, more of which I plan to take. In the meantime though I will be creating and presenting my own workshops in the new year on a variety of topics, and I’m pretty excited! Today was a/is a gorgeous sunny late fall day in Vancouver so after getting my soup ingredients ready and into the crock pot, I went down to Granville Island (http://granvilleisland.com/) . A wonderful eclectic area of unique shops, buskers entertaining us, and the Public Market. At the Public Market I bought some wonderful fresh rolls, some great local fruit, and 2 to-die-for coconut macaroons as a little treat!
So, Cowboy Soup…the recipe:
COWBOY SOUP (I used all organic ingredients except for the spanish rice)
1lb ground beef, browned and drained
1 can (14 oz) crushed tomatoes
1 can (14 oz) diced tomatoes with green chilies (if you can’t find the one w/ gr chilies just choose something else spicy)
1 can (15oz) whole kernel corn, drained
1/2c dried minced onion
1 box (6.8 oz) Spanish rice with seasoning packet
6 cups of water
Combine all ingredients in a greased 4.5-6qt slow cooker. Cover and cook on low heat for 4-5 hrs. Do not overcook. Top with grated cheese and sour cream if desired. Serve with tortilla chips. *note- I didn’t add minced onion, I added about 3/4 of a large fresh onion coarsely chopped and some minced garlic). Also I’m not eating mine with cheese or sour cream or tortilla chips. I having one of those fresh buns I bought at the market.
